Apple Breakfast Crisp

Equipment

Ingredients

Filling

  • 2 apples chopped
  • 3 tsp cornstarch
  • 1/2 tsp cinnamon
  • 1 tsp vanilla
  • 1 juice of lemon
  • 2 tbsp pure maple syrup

Topping

  • 1.5 cups rolled oats
  • 1 tsp cinnamon
  • 2 pinch nutmeg
  • 3 tbsp ground flax
  • 2 tbsp sliced almonds
  • 2 tbsp walnuts
  • 3 tbsp almond flour
  • 1/2 cup melted coconut oil

Instructions

  • Preheat oven 350°F and grease pie pan with coconut oil
  • Prepare the filling by adding apples, cornstarch, cinnamon, vanilla, juice of 1 lemon, and maple syrup to a bowl. Stir well to combine. Pour into the pie pan.
  • Using the same bowl, prepare the topping. Combine the oats, cinnamon, nutmeg, flax, nuts, and coconut oil. Mix well until evenly coated and distributed. Pour the topping over the apple filling.
  • Bake for 45 minutes or until golden brown and bubbly.
  • Let cool for a few minutes before enjoying.
  • Serve with a scoop of coconut yogurt or coconut whipped cream.
